Spiced Apple Cake

Ingredients
- For the cake
185g butter
3 medium Bramley apples
1 lemon
185g golden caster sugar
2 eggs
1 tbsp sour cream or milk
225g self-raising flour
110g raisins
- For the topping
25g muscovado sugar
1 tsp ground cinnamon
Directions
- Heat the oven to 180°C. Grease a tall 20cm cake tin and line with baking paper.
- Peel and core the applies; cut into small pieces. Stir in lemon zest and juice.
- In a separate bowl, cream the butter and sugar. Whisk the eggs with a fork and add 1/3 at a time to the cake mixture beating well after each addition. Add the milk or sour cream and raisins. Mix well.
- Sift the flour and add 1/3 at a time to the cake mixture until well combined.
- Stir in the apples with the lemon juice. Transfer to the baking tin, sprinkle with the topping and bake for 1 hour. Lower the heat to 170°C and bake for another 10 minutes.
