Chicken bang bang

2 chicken breasts
Spicy rub (Creole, BBQ, Cajun, etc)
1 iceberg salad
2 slicing tomatoes or a handful of cherry tomatoes
Half a fresh cucumber
A handful of radishes
Juice of half a lemon
Half a red cabbage or a wedge or red + white cabbage
1 tbsp white wine vinegar
3 tbsp crunch peanut butter
1 tbsp sweet chili sauce
Half a tsp of soy sauce
A sprinkle of black sesame seeds (optional)
Olive oil, salt and pepper
Directions
- Flatten the chicken with a meat beater and cover with the spicy rub, salt and olive oil. Leave to infuse.
- Shred the cabbage into a bowl with a mandoline, add a dash of the spicy rub, season with salt and add mix in the vinegar.
- In a separate bowl, mix shredded lettuce, sliced radishes, chopped tomatoes and cucumbers.
- In a mug, mix lemon juice, a slug of olive oil, salt and some spicy rub. Add the mixture to the salad and mix well.
- Grill the chicken.
- In the meantime, mix the peanut butter with some hot water. Add in the sweet chili sauce and soy sauce.
- Once the chicken is ready, cut it lengthways, then horizontally into bite-size pieces. Serve on salad, drizzled with the peanut sauce and sprinkled with sesame seeds and a serving of pickled cabbage.
