Roast chicken with zhoug

Whole roast chicken with zhoug, a spicy Yemenite herb paste. I get mine from Waitrose.


  • 1 jar of zhoug

  • 1 chicken

  • Half a lemon

  • A splash of rapeseed oil


  • Heat the oven to 180°C
  • Slide a small tablespoon under the chicken skin, at the bottom end of the chicken breast to loosen the skin. Stuff zhoug under the skin.
  • Squeeze lemon juice over the chicken and stuff the lemon in the cavity.
  • Season with salt and drizzle with the oil.
  • Cook for 45 minutes, then take out from the oven to baste. Cook for another 45 minutes basting every 15 minutes.
