Beef ribs slow cooked in Guinness

4 – 6 beef ribs
A packet of smoked chipotle rub
500ml bottle of Guinness
6 onions
Directions
- Slice the onions and spread at the bottom of a large roasting tin.
- Rub the smokey chipotle rub all over the ribs and lay them on top of the onions.
- Pour the Guinness into the tin. Cover the tin tightly with a double-layer of aluminium foil.
- Slow cook in the oven at 160°C for 4 hours. Every hour, turn over the ribs and top up with water if necessary.
Notes
- The cooking liquid makes an amazing, naturally sweet gravy.
