Beef ribs slow cooked in Guinness

  • Slice the onions and spread at the bottom of a large roasting tin.
  • Rub the smokey chipotle rub all over the ribs and lay them on top of the onions.
  • Pour the Guinness into the tin. Cover the tin tightly with a double-layer of aluminium foil.
  • Slow cook in the oven at 160°C for 4 hours. Every hour, turn over the ribs and top up with water if necessary.


  • The cooking liquid makes an amazing, naturally sweet gravy.
