German Apple Cake

2 apples, peeled, cored and cut into thin wedges
125g butter
140g golden caster sugar
3 eggs, lightly whisked
225g plain flour
2tsp baking powder
A pinch of salt
75ml sour cream
A handful or raisins (optional)
- For the topping
1/2 tsp cinnamon
1tbsp sugar
Icing sugar (optional)
Directions
- Heat the oven to 170 ° C.
- Butter a 23cm round baking dish and line with baking paper.
- Cream the butter and sugar until fluffy.
- Mix in the eggs, 1/3 at a time.
- Sift the flour. Mix in the baking powder and salt. Add to the cake batter 1/3 at a time.
- Add the sour cream, one tablespoon at a time and, finally, raisins, if using.
- Transfer the mixture to the baking tin. Top with apple wedges and sprinkle with sugar mixed with cinnamon.
- Bake for 50 minutes.
- When the cake has cooled down, sprinkle with icing sugar (optional) and serve with vanilla ice cream.
