Ingredients

  • 2 apples, peeled, cored and cut into thin wedges

  • 125g butter

  • 140g golden caster sugar

  • 3 eggs, lightly whisked

  • 225g plain flour

  • 2tsp baking powder

  • A pinch of salt

  • 75ml sour cream

  • A handful or raisins (optional)

  • For the topping
  • 1/2 tsp cinnamon

  • 1tbsp sugar

  • Icing sugar (optional)

Directions

  • Heat the oven to 170 ° C.
  • Butter a 23cm round baking dish and line with baking paper.
  • Cream the butter and sugar until fluffy.
  • Mix in the eggs, 1/3 at a time.
  • Sift the flour. Mix in the baking powder and salt. Add to the cake batter 1/3 at a time.
  • Add the sour cream, one tablespoon at a time and, finally, raisins, if using.
  • Transfer the mixture to the baking tin. Top with apple wedges and sprinkle with sugar mixed with cinnamon.
  • Bake for 50 minutes.
  • When the cake has cooled down, sprinkle with icing sugar (optional) and serve with vanilla ice cream.
