Slow cooked ribs in bbq sauce

Slow-cooked pork ribs in a sticky BBQ sauce.

Ingredients

  • 2 racks of pork ribs, cut in half

  • 1 packet chipotle dry rub seasoning. I’m using Bart’s.

  • 2 bottles of BBQ sauce or a combination of BBQ and chili sauces.

  • 1 tbsp muscovado sugar

  • 1 tbsp smoked paprika

Directions

  • Heat the oven to 160°C
  • Pour the BBQ sauce or a combination of BBQ and chili sauces into a large oven-proof dish with a lid.
  • Add the sugar and smoked paprika. Adjust seasoning to taste, i.e. add more chili sauce.
  • Cover the ribs in the dry rub and arrange in the dish. Cover with a lid and cook for 45mins.
  • Take out the ribs from the oven and turn them over in the pot. Put back in the oven for another 45 minutes. Then cook for a further hour, turning them over half-way through.
