  • For the cake
  • 185g butter

  • 3 medium Bramley apples

  • 1 lemon

  • 185g golden caster sugar

  • 2 eggs

  • 1 tbsp sour cream or milk

  • 225g self-raising flour

  • 110g raisins

  • For the topping
  • 25g muscovado sugar

  • 1 tsp ground cinnamon


  • Heat the oven to 180°C. Grease a tall 20cm cake tin and line with baking paper.
  • Peel and core the applies; cut into small pieces. Stir in lemon zest and juice.
  • In a separate bowl, cream the butter and sugar. Whisk the eggs with a fork and add 1/3 at a time to the cake mixture beating well after each addition. Add the milk or sour cream and raisins. Mix well.
  • Sift the flour and add 1/3 at a time to the cake mixture until well combined.
  • Stir in the apples with the lemon juice. Transfer to the baking tin, sprinkle with the topping and bake for 1 hour. Lower the heat to 170°C and bake for another 10 minutes.
